The Greaves Park is a Pub and Restaurant with function facilities
Katy Petrillo, Category Development Manager at ViVAS, completed a wine needs analysis for Greaves Park and discovered the following key requirements: improve GP on wine, improve and consolidate deliveries from suppliers, and ensure a more consistent consumer offering both at the bar and in the restaurant.
Katy then implemented a plan to add value to the current drinks offering and to make wine simple for the team, following three simple steps:
- Staff training - improved basic wine knowledge, tasting through the wine list, food matching, and how to serve wine.
- POS - creating a printed wine list, wine of the month tent cards, bespoke promotion of mulled wine to feature for Winter promotions, and tips for effective merchandising.
- Sales incentives - following the wine training, Katy had recommended products for upselling and Anthony Parker, General Manager, was the driving force behind the incentive for his team.
The results were impressive, with higher GP's achieved, revised and refreshed wine lists created to reduce stock holding lines and gain new interest from customers, and an incentive developed to renew staff enthusiasm.
